Avocado Toast

Ingredients

  • 2 ripe avocados
  • 4 slices whole grain bread
  • 1 tbsp lemon juice
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • Optional toppings:
    • Cherry tomatoes, halved
    • Red pepper flakes
    • Feta cheese, crumbled
    • Microgreens
    • Poached or fried eggs

Instructions

  1. Prepare the Avocado:
    1. Cut the avocados in half, remove the pits, and scoop the flesh into a bowl.
    2. Add the lemon juice, sea salt, and black pepper to the bowl.
    3. Mash the avocado mixture with a fork until it's creamy but still slightly chunky.
  2. Toast the Bread:
    1. Toast the slices of whole grain bread until they are golden brown and crispy.
  3. Assemble the Avocado Toast:
    1. Spread the mashed avocado evenly onto each slice of toasted bread.
    2. Add any optional toppings you desire, such as cherry tomatoes, red pepper flakes, feta cheese, microgreens, or a poached/fried egg.
  4. Serve:
    1. Serve the avocado toast immediately.
