Baked Salmon with Sweet Potato Mash

Ingredients

For the Baked Salmon:

  • 4 salmon fillets (about 6 oz each)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 lemon, sliced
  • 1 tsp dried dill
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

For the Sweet Potato Mash:

  • 4 large sweet potatoes, peeled and cubed
  • 2 tbsp butter or dairy-free alternative
  • 1/4 cup milk or dairy-free alternative
  • 1/2 tsp ground cinnamon
  • Salt and pepper to taste

Instructions

Prepare the Baked Salmon:

  1. Preheat your oven to 400°F (200°C).
  2. Place the salmon fillets on a baking sheet lined with parchment paper.
  3. Drizzle the salmon with olive oil and sprinkle with minced garlic, dried dill, salt, and pepper.
  4. Arrange lemon slices on top of and around the salmon fillets.
  5. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  6. Garnish with fresh parsley if desired.

Prepare the Sweet Potato Mash:

  1. While the salmon is baking, place the peeled and cubed sweet potatoes in a large pot and cover with water.
  2. Bring to a boil over medium-high heat, then reduce the heat to medium and simmer until the sweet potatoes are tender, about 15-20 minutes.
  3. Drain the sweet potatoes and return them to the pot.
  4. Add the butter, milk, ground cinnamon, salt, and pepper.
  5. Mash the sweet potatoes until smooth and creamy. Adjust seasoning to taste.

Serve:

  1. Divide the sweet potato mash among serving plates.
  2. Top with a baked salmon fillet.
  3. Serve immediately.
