Baked Salmon with Sweet Potato Mash
Ingredients
For the Baked Salmon:
- 4 salmon fillets (about 6 oz each)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 lemon, sliced
- 1 tsp dried dill
- Salt and pepper to taste
- Fresh parsley, chopped (optional, for garnish)
For the Sweet Potato Mash:
- 4 large sweet potatoes, peeled and cubed
- 2 tbsp butter or dairy-free alternative
- 1/4 cup milk or dairy-free alternative
- 1/2 tsp ground cinnamon
- Salt and pepper to taste
Instructions
Prepare the Baked Salmon:
- Preheat your oven to 400°F (200°C).
- Place the salmon fillets on a baking sheet lined with parchment paper.
- Drizzle the salmon with olive oil and sprinkle with minced garlic, dried dill, salt, and pepper.
- Arrange lemon slices on top of and around the salmon fillets.
- Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Garnish with fresh parsley if desired.
Prepare the Sweet Potato Mash:
- While the salmon is baking, place the peeled and cubed sweet potatoes in a large pot and cover with water.
- Bring to a boil over medium-high heat, then reduce the heat to medium and simmer until the sweet potatoes are tender, about 15-20 minutes.
- Drain the sweet potatoes and return them to the pot.
- Add the butter, milk, ground cinnamon, salt, and pepper.
- Mash the sweet potatoes until smooth and creamy. Adjust seasoning to taste.
Serve:
- Divide the sweet potato mash among serving plates.
- Top with a baked salmon fillet.
- Serve immediately.
