Baked Tofu with Brown Rice
Ingredients
For the Baked Tofu:
- 1 block (14 oz) firm tofu, pressed and cubed
- 2 tbsp soy sauce
- 1 tbsp olive oil
- 1 tbsp maple syrup
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
For the Brown Rice:
- 1 cup brown rice
- 2 cups water or vegetable broth
- Pinch of salt
For Serving:
- 2 green onions, sliced
- 1/4 cup fresh cilantro, chopped
- 1 tbsp sesame seeds (optional)
- Soy sauce or tamari for drizzling
Instructions
Prepare the Brown Rice:
- Rinse the brown rice under cold water.
- In a medium saucepan, bring 2 cups of water or vegetable broth to a boil with a pinch of salt.
- Add the brown rice, reduce the heat to low, cover, and simmer for 45 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit, covered, for 10 minutes. Fluff with a fork before serving.
Prepare the Baked Tofu:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, combine the soy sauce, olive oil, maple syrup, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well.
- Add the cubed tofu to the bowl and gently toss to coat evenly with the marinade.
- Spread the tofu cubes in a single layer on the prepared baking sheet.
- Bake for 25-30 minutes, turning the tofu halfway through, until the tofu is golden brown and crispy on the edges.
Serve:
- Divide the cooked brown rice among serving plates.
- Top with the baked tofu cubes.
- Garnish with sliced green onions, chopped fresh cilantro, and sesame seeds if desired.
- Drizzle with soy sauce or tamari before serving.
