Baked Tofu with Brown Rice

Ingredients

For the Baked Tofu:

  • 1 block (14 oz) firm tofu, pressed and cubed
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

For the Brown Rice:

  • 1 cup brown rice
  • 2 cups water or vegetable broth
  • Pinch of salt

For Serving:

  • 2 green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 tbsp sesame seeds (optional)
  • Soy sauce or tamari for drizzling

Instructions

Prepare the Brown Rice:

  1. Rinse the brown rice under cold water.
  2. In a medium saucepan, bring 2 cups of water or vegetable broth to a boil with a pinch of salt.
  3. Add the brown rice, reduce the heat to low, cover, and simmer for 45 minutes, or until the rice is tender and the liquid is absorbed.
  4. Remove from heat and let it sit, covered, for 10 minutes. Fluff with a fork before serving.

Prepare the Baked Tofu:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine the soy sauce, olive oil, maple syrup, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well.
  3. Add the cubed tofu to the bowl and gently toss to coat evenly with the marinade.
  4. Spread the tofu cubes in a single layer on the prepared baking sheet.
  5. Bake for 25-30 minutes, turning the tofu halfway through, until the tofu is golden brown and crispy on the edges.

Serve:

  1. Divide the cooked brown rice among serving plates.
  2. Top with the baked tofu cubes.
  3. Garnish with sliced green onions, chopped fresh cilantro, and sesame seeds if desired.
  4. Drizzle with soy sauce or tamari before serving.
