Banana Pancakes

Ingredients

  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup milk
  • 1 large egg
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 2 ripe bananas, mashed
  • Butter or oil for cooking
  • Optional toppings: maple syrup, sliced bananas, nuts

Instructions

  1. Prepare the Batter:
    1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
    2. In another bowl, mix the milk, egg, melted butter, and vanilla extract until well combined.
    3. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
    4. Fold in the mashed bananas until evenly distributed.
  2. Cook the Pancakes:
    1. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
    2. Pour 1/4 cup of batter onto the skillet for each pancake.
    3. Cook until bubbles form on the surface of the pancakes and the edges look set, about 2-3 minutes.
    4. Flip the pancakes and cook for another 2-3 minutes, until golden brown and cooked through.
    5. Repeat with the remaining batter, greasing the skillet as needed.
  3. Serve:
    1. Serve the pancakes warm with your favorite toppings, such as maple syrup, sliced bananas, or nuts.
