Spinach and Feta Breakfast Quesadilla
Ingredients
- 2 large whole wheat tortillas
- 2 cups fresh spinach
- 1/2 cup feta cheese, crumbled
- 4 large eggs
- 1/4 cup milk (or dairy-free alternative)
- Salt and pepper to taste
- 1 tbsp olive oil or butter
- Optional toppings: salsa, avocado slices, sour cream
Instructions
- Prepare the Eggs:
- In a bowl, whisk together the eggs, milk, salt, and pepper.
- Cook the Spinach:
- Heat the olive oil or butter in a large skillet over medium heat.
- Add the fresh spinach and cook until wilted, about 2-3 minutes.
- Remove the spinach from the skillet and set aside.
- Scramble the Eggs:
- In the same skillet, pour in the egg mixture.
- Cook, stirring frequently, until the eggs are scrambled and just set. Remove from heat.
- Assemble the Quesadilla:
- Place one tortilla in a clean, dry skillet over medium heat.
- Spread half of the scrambled eggs evenly over the tortilla.
- Top with half of the cooked spinach and half of the crumbled feta cheese.
- Place the second tortilla on top.
- Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
- Repeat with the remaining ingredients to make the second quesadilla.
- Serve:
- Cut each quesadilla into wedges and serve with optional toppings such as salsa, avocado slices, or sour cream.
