Spinach and Feta Breakfast Quesadilla

Ingredients

  • 2 large whole wheat tortillas
  • 2 cups fresh spinach
  • 1/2 cup feta cheese, crumbled
  • 4 large eggs
  • 1/4 cup milk (or dairy-free alternative)
  • Salt and pepper to taste
  • 1 tbsp olive oil or butter
  • Optional toppings: salsa, avocado slices, sour cream

Instructions

  1. Prepare the Eggs:
    1. In a bowl, whisk together the eggs, milk, salt, and pepper.
  2. Cook the Spinach:
    1. Heat the olive oil or butter in a large skillet over medium heat.
    2. Add the fresh spinach and cook until wilted, about 2-3 minutes.
    3. Remove the spinach from the skillet and set aside.
  3. Scramble the Eggs:
    1. In the same skillet, pour in the egg mixture.
    2. Cook, stirring frequently, until the eggs are scrambled and just set. Remove from heat.
  4. Assemble the Quesadilla:
    1. Place one tortilla in a clean, dry skillet over medium heat.
    2. Spread half of the scrambled eggs evenly over the tortilla.
    3. Top with half of the cooked spinach and half of the crumbled feta cheese.
    4. Place the second tortilla on top.
    5. Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
    6. Repeat with the remaining ingredients to make the second quesadilla.
  5. Serve:
    1. Cut each quesadilla into wedges and serve with optional toppings such as salsa, avocado slices, or sour cream.
