Overnight Chia Seed Pudding

Ingredients

  • 1/4 cup chia seeds
  • 1 cup unsweetened almond milk (or milk of your choice)
  • 1-2 tbsp honey or maple syrup (to taste)
  • 1/2 tsp vanilla extract
  • Fresh fruit for topping (berries, banana slices, mango, etc.)
  • Nuts or seeds for topping (optional)

Instructions

  1. Mix the Pudding:
    1. In a medium-sized bowl or jar, combine the chia seeds, almond milk, honey or maple syrup, and vanilla extract.
    2. Stir well to combine, making sure the chia seeds are evenly distributed and not clumping together.
  2. Refrigerate Overnight:
    1. Cover the bowl or jar and refrigerate for at least 4 hours, or overnight.
    2. Stir the mixture after the first hour to prevent clumping.
  3. Serve:
    1. In the morning, give the pudding a good stir.
    2. Top with fresh fruit and nuts or seeds if desired.
    3. Enjoy chilled.
