Chicken Fajitas with Whole Wheat Tortillas

Ingredients

For the Chicken Fajitas:

  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large onion, sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • 1 lime, juiced
  • Fresh cilantro, chopped (optional, for garnish)

For the Whole Wheat Tortillas:

  • 8 whole wheat tortillas

Optional Toppings:

  • 1 avocado, sliced
  • 1 cup salsa
  • 1/2 cup sour cream or Greek yogurt
  • 1 cup shredded cheese (cheddar, Monterey Jack, or your choice)
  • 1 lime, cut into wedges

Instructions

Prepare the Chicken Fajitas:

  1. Marinate the Chicken:
    1. In a large bowl, combine the sliced chicken, olive oil, minced garlic, ground cumin, chili powder, paprika, dried oregano, salt, pepper, and lime juice. Mix well to coat the chicken evenly.
    2. Let it marinate for at least 15 minutes.
  2. Cook the Chicken and Vegetables:
    1. Heat a large skillet or cast-iron pan over medium-high heat.
    2. Add the marinated chicken to the skillet and cook for 5-7 minutes until the chicken is cooked through. Remove the chicken from the skillet and set aside.
    3. In the same skillet, add the sliced bell peppers and onion. Cook for 5-7 minutes until the vegetables are tender and slightly charred.
    4. Return the chicken to the skillet and stir to combine with the vegetables. Cook for another 2-3 minutes until heated through.

Prepare the Whole Wheat Tortillas:

  1. Warm the whole wheat tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until they are warm and pliable.

Assemble the Fajitas:

  1. Place a portion of the chicken and vegetable mixture onto each warm tortilla.
  2. Add optional toppings such as sliced avocado, salsa, sour cream, shredded cheese, and a squeeze of lime juice.
  3. Garnish with fresh cilantro if desired.

Serve:

  1. Serve the chicken fajitas immediately.
