Chicken Fajitas with Whole Wheat Tortillas
Ingredients
For the Chicken Fajitas:
- 1 lb boneless, skinless chicken breasts, thinly sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 large onion, sliced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp dried oregano
- Salt and pepper to taste
- 1 lime, juiced
- Fresh cilantro, chopped (optional, for garnish)
For the Whole Wheat Tortillas:
Optional Toppings:
- 1 avocado, sliced
- 1 cup salsa
- 1/2 cup sour cream or Greek yogurt
- 1 cup shredded cheese (cheddar, Monterey Jack, or your choice)
- 1 lime, cut into wedges
Instructions
Prepare the Chicken Fajitas:
- Marinate the Chicken:
- In a large bowl, combine the sliced chicken, olive oil, minced garlic, ground cumin, chili powder, paprika, dried oregano, salt, pepper, and lime juice. Mix well to coat the chicken evenly.
- Let it marinate for at least 15 minutes.
- Cook the Chicken and Vegetables:
- Heat a large skillet or cast-iron pan over medium-high heat.
- Add the marinated chicken to the skillet and cook for 5-7 minutes until the chicken is cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced bell peppers and onion. Cook for 5-7 minutes until the vegetables are tender and slightly charred.
- Return the chicken to the skillet and stir to combine with the vegetables. Cook for another 2-3 minutes until heated through.
Prepare the Whole Wheat Tortillas:
- Warm the whole wheat tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until they are warm and pliable.
Assemble the Fajitas:
- Place a portion of the chicken and vegetable mixture onto each warm tortilla.
- Add optional toppings such as sliced avocado, salsa, sour cream, shredded cheese, and a squeeze of lime juice.
- Garnish with fresh cilantro if desired.
Serve:
- Serve the chicken fajitas immediately.
