Greek Chicken Pita
Ingredients
- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 lemon, juiced
- 4 whole wheat pitas
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted and sliced
- 1/2 cup feta cheese, crumbled
- 1 cup tzatziki sauce
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Marinate the Chicken:
- In a large bowl, combine the olive oil, minced garlic, dried oregano, dried thyme, salt, pepper, and lemon juice.
- Add the chicken breasts to the bowl and coat them with the marinade.
- Cover and refrigerate for at least 30 minutes, or up to 2 hours.
- Cook the Chicken:
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and grill for 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C).
- Remove the chicken from the grill and let it rest for 5 minutes before slicing.
- Prepare the Vegetables:
- While the chicken is marinating, prepare the cherry tomatoes, cucumber, red onion, and Kalamata olives.
- Assemble the Pitas:
- Warm the whole wheat pitas on the grill or in a skillet for a few minutes.
- Spread a generous amount of tzatziki sauce on each pita.
- Top with sliced grilled chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, and crumbled feta cheese.
- Garnish with fresh parsley if desired.
- Serve:
- Serve the Greek Chicken Pitas immediately.
