Greek Chicken Pita

Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 lemon, juiced
  • 4 whole wheat pitas
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1 cup tzatziki sauce
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Marinate the Chicken:
    1. In a large bowl, combine the olive oil, minced garlic, dried oregano, dried thyme, salt, pepper, and lemon juice.
    2. Add the chicken breasts to the bowl and coat them with the marinade.
    3. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
  2. Cook the Chicken:
    1. Preheat the grill to medium-high heat.
    2. Remove the chicken from the marinade and grill for 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C).
    3. Remove the chicken from the grill and let it rest for 5 minutes before slicing.
  3. Prepare the Vegetables:
    1. While the chicken is marinating, prepare the cherry tomatoes, cucumber, red onion, and Kalamata olives.
  4. Assemble the Pitas:
    1. Warm the whole wheat pitas on the grill or in a skillet for a few minutes.
    2. Spread a generous amount of tzatziki sauce on each pita.
    3. Top with sliced grilled chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, and crumbled feta cheese.
    4. Garnish with fresh parsley if desired.
  5. Serve:
    1. Serve the Greek Chicken Pitas immediately.
