Grilled Chicken Caesar Salad

Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 large head romaine lettuce, chopped
  • 1/2 cup Caesar dressing
  • 1/2 cup grated Parmesan cheese
  • 1 cup croutons
  • 1 lemon, cut into wedges (optional)

Instructions

  1. Prepare the Chicken:
    1. Preheat the grill to medium-high heat.
    2. Brush the chicken breasts with 1 tbsp of olive oil and season with salt, pepper, garlic powder, and paprika.
    3. Grill the chicken for 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C).
    4. Remove the chicken from the grill and let it rest for 5 minutes before slicing.
  2. Prepare the Salad:
    1. In a large bowl, combine the chopped romaine lettuce, Caesar dressing, grated Parmesan cheese, and croutons.
    2. Toss until the lettuce is evenly coated with the dressing.
  3. Assemble the Salad:
    1. Divide the salad mixture among four plates.
    2. Top each salad with the sliced grilled chicken.
    3. Serve with lemon wedges on the side, if desired.
  4. Serve:
    1. Serve immediately.
