Grilled Chicken Salad

Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 6 cups mixed salad greens (lettuce, spinach, arugula, etc.)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1 avocado, sliced
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup balsamic vinaigrette or dressing of your choice

Instructions

  1. Prepare the Chicken:
    1. Preheat the grill to medium-high heat.
    2. Brush the chicken breasts with 1 tbsp of olive oil and season with salt, pepper, garlic powder, and paprika.
    3. Grill the chicken for 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C).
    4. Remove the chicken from the grill and let it rest for 5 minutes before slicing.
  2. Prepare the Salad:
    1. In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, and avocado.
    2. Toss the salad with the remaining 1 tbsp of olive oil and balsamic vinaigrette or dressing of your choice.
  3. Assemble the Salad:
    1. Divide the salad mixture among four plates.
    2. Top each salad with the sliced grilled chicken.
    3. Sprinkle with feta cheese if using.
  4. Serve:
    1. Serve immediately.
