Grilled Chicken Salad
Ingredients
- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tsp garlic powder
- 1 tsp paprika
- 6 cups mixed salad greens (lettuce, spinach, arugula, etc.)
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1 avocado, sliced
- 1/4 cup feta cheese, crumbled (optional)
- 1/4 cup balsamic vinaigrette or dressing of your choice
Instructions
- Prepare the Chicken:
- Preheat the grill to medium-high heat.
- Brush the chicken breasts with 1 tbsp of olive oil and season with salt, pepper, garlic powder, and paprika.
- Grill the chicken for 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C).
- Remove the chicken from the grill and let it rest for 5 minutes before slicing.
- Prepare the Salad:
- In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, and avocado.
- Toss the salad with the remaining 1 tbsp of olive oil and balsamic vinaigrette or dressing of your choice.
- Assemble the Salad:
- Divide the salad mixture among four plates.
- Top each salad with the sliced grilled chicken.
- Sprinkle with feta cheese if using.
- Serve:
- Serve immediately.
