Lean Beef Stir-Fry with Brown Rice

Ingredients

For the Stir-Fry:

  • 1 lb lean beef (such as sirloin or flank steak), thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil
  • 1 large red bell pepper, sliced
  • 1 large yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 large carrot, julienned
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 2 green onions, sliced
  • 1/4 cup low-sodium soy sauce (for sauce)
  • 1 tbsp cornstarch
  • 1/4 cup water
  • Sesame seeds (optional, for garnish)
  • Fresh cilantro (optional, for garnish)

For the Brown Rice:

  • 1 cup brown rice
  • 2 cups water
  • Pinch of salt

Instructions

Prepare the Brown Rice:

  1. Rinse the brown rice under cold water.
  2. In a medium saucepan, bring 2 cups of water to a boil with a pinch of salt.
  3. Add the brown rice, reduce the heat to low, cover, and simmer for 45 minutes, or until the rice is tender and the water is absorbed.
  4. Remove from heat and let it sit, covered, for 10 minutes. Fluff with a fork before serving.

Prepare the Stir-Fry:

  1. Marinate the Beef:
    1. In a bowl, combine the sliced beef with 2 tbsp soy sauce, oyster sauce, hoisin sauce, and sesame oil. Mix well and let it marinate for at least 15 minutes.
  2. Cook the Beef:
    1. Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat.
    2. Add the marinated beef and cook until browned, about 3-4 minutes. Remove the beef from the skillet and set aside.
  3. Cook the Vegetables:
    1. In the same skillet, add the remaining 1 tbsp of vegetable oil.
    2. Add the minced garlic and ginger and cook for 1 minute until fragrant.
    3. Add the sliced bell peppers, broccoli florets, and julienned carrot. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
  4. Combine Beef and Vegetables:
    1. Return the cooked beef to the skillet.
    2. In a small bowl, whisk together 1/4 cup soy sauce, cornstarch, and water. Pour the sauce over the beef and vegetables.
    3. Stir well to coat everything in the sauce and cook for another 2-3 minutes until the sauce thickens.
  5. Serve:
    1. Divide the brown rice among serving plates.
    2. Top with the beef and vegetable stir-fry.
    3. Garnish with sesame seeds and fresh cilantro if desired.
    4. Serve immediately.
