Apple Cinnamon Overnight Oats

Ingredients

  • 1 cup rolled oats
  • 1 cup unsweetened almond milk (or milk of your choice)
  • 1/2 cup Greek yogurt
  • 1 apple, diced
  • 1 tbsp chia seeds
  • 1 tbsp honey or maple syrup
  • 1/2 tsp ground cinnamon
  • 1/4 tsp vanilla extract
  • Pinch of salt
  • Optional toppings: additional diced apples, nuts, or seeds

Instructions

  1. Prepare the Base:
    1. In a medium-sized bowl, combine the rolled oats, almond milk, and Greek yogurt.
    2. Stir in the diced apple, chia seeds, honey or maple syrup, ground cinnamon, vanilla extract, and a pinch of salt.
  2. Mix and Refrigerate:
    1. Mix all the ingredients until well combined.
    2. Cover the bowl or transfer the mixture into individual jars or containers.
    3. Refrigerate overnight, or for at least 4 hours, to allow the oats to soften and absorb the liquid.
  3. Serve:
    1. In the morning, give the oats a good stir.
    2. If the mixture is too thick, add a splash of milk to reach your desired consistency.
    3. Top with additional diced apples, nuts, or seeds if desired.
    4. Enjoy cold, or warm it up in the microwave if you prefer a hot breakfast.
