Scrambled Egg Breakfast Wrap

Ingredients

  • 4 large eggs
  • 1/4 cup milk (or dairy-free alternative)
  • Salt and pepper to taste
  • 1 tbsp butter or olive oil
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1 avocado, sliced
  • 4 large whole wheat tortillas
  • Salsa (optional, for serving)

Instructions

  1. Prepare the Eggs:
    1. In a bowl, whisk together the eggs, milk, salt, and pepper.
  2. Cook the Eggs:
    1. Heat the butter or olive oil in a non-stick skillet over medium heat.
    2. Pour in the egg mixture and cook, stirring frequently, until the eggs are scrambled and just set. Remove from heat.
  3. Assemble the Wraps:
    1. Lay out the whole wheat tortillas on a clean surface.
    2. Divide the scrambled eggs evenly among the tortillas, placing them in the center of each tortilla.
    3. Top each with shredded cheddar cheese, diced tomatoes, chopped green onions, and avocado slices.
  4. Wrap It Up:
    1. Fold in the sides of each tortilla and then roll it up tightly to form a wrap.
  5. Serve:
    1. Serve immediately with salsa on the side, if desired.
