Grilled Shrimp Skewers

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish, optional)
  • Wooden or metal skewers

Instructions

  1. Prepare the Marinade:
    1. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, paprika, dried oregano, salt, black pepper, and red pepper flakes (if using).
  2. Marinate the Shrimp:
    1. Place the shrimp in a large resealable plastic bag or a shallow dish.
    2. Pour the marinade over the shrimp, seal the bag or cover the dish, and refrigerate for at least 30 minutes.
  3. Prepare the Skewers:
    1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
    2. Thread the marinated shrimp onto the skewers, piercing each shrimp through the tail and the thick end.
  4. Grill the Skewers:
    1. Preheat the grill to medium-high heat.
    2. Place the skewers on the grill and cook for 2-3 minutes per side, or until the shrimp are opaque and slightly charred.
    3. Remove from the grill and let rest for a few minutes before serving.
  5. Serve:
    1. Garnish the skewers with chopped fresh parsley, if desired.
    2. Serve hot with lemon wedges on the side.
