Grilled Shrimp Skewers
Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 3 cloves garlic, minced
- 1 tsp paprika
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- Fresh parsley, chopped (for garnish, optional)
- Wooden or metal skewers
Instructions
- Prepare the Marinade:
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, paprika, dried oregano, salt, black pepper, and red pepper flakes (if using).
- Marinate the Shrimp:
- Place the shrimp in a large resealable plastic bag or a shallow dish.
- Pour the marinade over the shrimp, seal the bag or cover the dish, and refrigerate for at least 30 minutes.
- Prepare the Skewers:
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Thread the marinated shrimp onto the skewers, piercing each shrimp through the tail and the thick end.
- Grill the Skewers:
- Preheat the grill to medium-high heat.
- Place the skewers on the grill and cook for 2-3 minutes per side, or until the shrimp are opaque and slightly charred.
- Remove from the grill and let rest for a few minutes before serving.
- Serve:
- Garnish the skewers with chopped fresh parsley, if desired.
- Serve hot with lemon wedges on the side.
