Turkey and Avocado Wrap

Ingredients

  • 4 large whole wheat tortillas
  • 1 lb sliced turkey breast
  • 2 ripe avocados
  • 1 cup baby spinach leaves
  • 1/2 cup shredded cheddar cheese (optional)
  • 1/2 cup sliced red onion
  • 1/2 cup sliced tomatoes
  • 1/4 cup mayonnaise (optional)
  • 2 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Prepare the Avocado:
    1. Cut the avocados in half, remove the pit, and scoop the flesh into a bowl.
    2. Add lemon juice, salt, and pepper to taste.
    3. Mash the avocado with a fork until smooth.
  2. Prepare the Tortillas:
    1. Lay out the whole wheat tortillas on a clean surface.
    2. If using mayonnaise, spread a thin layer over each tortilla.
  3. Assemble the Wraps:
    1. Spread a generous amount of the mashed avocado over each tortilla.
    2. Layer the spinach leaves, sliced turkey breast, shredded cheddar cheese (if using), sliced red onion, and sliced tomatoes evenly over each tortilla.
    3. Drizzle Dijon mustard over the fillings.
  4. Wrap It Up:
    1. Carefully roll up each tortilla tightly, tucking in the sides as you go to keep the fillings inside.
    2. Slice each wrap in half, if desired, for easier eating.
  5. Serve:
    1. Serve immediately, or wrap tightly in plastic wrap and refrigerate until ready to eat.
