Vegetable and Hummus Plate
Vegetable and Hummus Plate Recipe
Ingredients:
- 1 cup hummus (store-bought or homemade)
- 1 cucumber, sliced
- 2-3 bell peppers (red, yellow, and/or orange), sliced into strips
- 2-3 carrots, cut into sticks
- 1 pint cherry tomatoes
- 1 bunch radishes, sliced
- 1 small head broccoli, cut into florets
- 1 small head cauliflower, cut into florets
- 1 bunch celery, cut into sticks
- 1/2 cup olives (optional)
- 1/4 cup crumbled feta cheese (optional)
- Fresh herbs for garnish (optional: parsley, cilantro, or dill)
Instructions:
- Prepare the Vegetables:
- Wash all the vegetables thoroughly.
- Slice the cucumber into rounds.
- Slice the bell peppers into strips.
- Cut the carrots into sticks.
- Slice the radishes.
- Cut the broccoli and cauliflower into small florets.
- Cut the celery into sticks.
- Arrange the cherry tomatoes, either whole or halved.
Assemble the Plate:
- On a large serving platter or plate, place the cup of hummus in the center.
- Arrange the prepared vegetables around the hummus in a visually appealing manner.
- Add olives and crumbled feta cheese if using.
- Garnish with fresh herbs if desired.
Serve:
- Serve immediately, or cover and refrigerate until ready to serve.
- Enjoy as a healthy snack, appetizer, or light meal.

Optional Homemade Hummus Recipe
Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup tahini
- 2-3 tbsp lemon juice (1 large lemon)
- 2 cloves garlic, minced
- 2-3 tbsp olive oil
- 1 tsp ground cumin
- Salt to taste
- 2-4 tbsp water (to desired consistency)
Instructions:
In a food processor, combine the chickpeas, tahini, lemon juice, garlic, olive oil, cumin, and salt.
Process until smooth, adding water a tablespoon at a time until the desired consistency is reached.
Adjust seasoning to taste.
