Vegetarian Chili

Vegetarian Chili Recipe:

Ingredients:

  • 2 tbsp olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 jalapeño, seeded and finely chopped (optional for heat)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (28 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 cup vegetable broth
  • 2 tbsp tomato paste
  • 1 tbsp chili powder
  • 1 tbsp ground cumin
  • 2 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp ground coriander
  • 1/2 tsp cayenne pepper (optional for extra heat)
  • Salt and pepper to taste
  • 1 cup frozen corn kernels
  • 1 lime, juiced
  • Fresh cilantro, chopped (for garnish)

Instructions:

  • Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until the onion is translucent, about 5 minutes.
  • Add the red bell pepper, green bell pepper, carrots, celery, and jalapeño (if using). Cook, stirring occasionally, until the vegetables are tender, about 10 minutes.
  • Stir in the black beans, kidney beans, pinto beans, diced tomatoes, tomato sauce, vegetable broth, and tomato paste.
  • Add the chili powder, cumin, paprika, oregano, coriander, cayenne pepper (if using), salt, and pepper. Stir well to combine.
  • Bring the mixture to a boil, then reduce the heat to low and simmer, uncovered, for about 30-40 minutes, stirring occasionally.
  • Add the frozen corn and cook for an additional 5 minutes.
  • Stir in the lime juice and adjust the seasoning with salt and pepper, if needed.
  • Serve the chili hot, garnished with fresh cilantro.

  • Pepper

Frozen:

  • 1 cup frozen corn kernels

  • Shredded cheese (for topping)
  • Avocado (for topping)
  • Tortilla chips or bread (for serving)
