Vegetarian Chili
Vegetarian Chili Recipe:
Ingredients:
- 2 tbsp olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 jalapeño, seeded and finely chopped (optional for heat)
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 can (28 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 1 cup vegetable broth
- 2 tbsp tomato paste
- 1 tbsp chili powder
- 1 tbsp ground cumin
- 2 tsp paprika
- 1 tsp dried oregano
- 1 tsp ground coriander
- 1/2 tsp cayenne pepper (optional for extra heat)
- Salt and pepper to taste
- 1 cup frozen corn kernels
- 1 lime, juiced
- Fresh cilantro, chopped (for garnish)
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until the onion is translucent, about 5 minutes.
- Add the red bell pepper, green bell pepper, carrots, celery, and jalapeño (if using). Cook, stirring occasionally, until the vegetables are tender, about 10 minutes.
- Stir in the black beans, kidney beans, pinto beans, diced tomatoes, tomato sauce, vegetable broth, and tomato paste.
- Add the chili powder, cumin, paprika, oregano, coriander, cayenne pepper (if using), salt, and pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low and simmer, uncovered, for about 30-40 minutes, stirring occasionally.
- Add the frozen corn and cook for an additional 5 minutes.
- Stir in the lime juice and adjust the seasoning with salt and pepper, if needed.
- Serve the chili hot, garnished with fresh cilantro.
