Veggie Burger with Sweet Potato Fries

Veggie Burger

Ingredients:

  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup breadcrumbs (whole grain preferred)
  • 1/4 cup grated carrots
  • 1/4 cup finely chopped red onion
  • 1/4 cup finely chopped bell pepper (any color)
  • 1/4 cup chopped fresh parsley
  • 1 clove garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • 1 egg (or flax egg for vegan: 1 tbsp ground flaxseed mixed with 2.5 tbsp water)
  • Salt and pepper to taste
  • 1 tbsp olive oil (for cooking)
  • 4 whole grain burger buns
  • Lettuce, tomato slices, and avocado slices for serving

Instructions:

  • In a large bowl, mash the black beans with a fork or potato masher until mostly smooth with some chunks remaining.
  • Add the breadcrumbs, grated carrots, red onion, bell pepper, parsley, garlic, cumin, paprika, chili powder, egg (or flax egg), salt, and pepper. Mix until well combined.
  • Form the mixture into 4 patties.
  • Heat the olive oil in a large skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until browned and heated through.
  • Toast the whole grain burger buns in the same skillet or oven if desired.
  • Serve the veggie burgers on buns with lettuce, tomato slices, and avocado slices.
  • Sweet Potato Fries Recipe

    Ingredients:

  • 2 large sweet potatoes
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp ground cumin
  • Salt and pepper to taste
  • Instructions:

  • Preheat the oven to 425°F (220°C).
  • Peel the sweet potatoes and cut them into 1/4-inch thick fries.
  • In a large bowl, toss the sweet potato fries with olive oil, garlic powder, paprika, cumin, salt, and pepper.
  • Spread the fries in a single layer on a baking sheet lined with parchment paper.
  • Bake for 25-30 minutes, turning halfway through, until crispy and golden brown.
  • Remove from the oven and let cool slightly before serving.
