Veggie Burger with Sweet Potato Fries
Veggie Burger
Ingredients:
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup breadcrumbs (whole grain preferred)
- 1/4 cup grated carrots
- 1/4 cup finely chopped red onion
- 1/4 cup finely chopped bell pepper (any color)
- 1/4 cup chopped fresh parsley
- 1 clove garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp chili powder
- 1 egg (or flax egg for vegan: 1 tbsp ground flaxseed mixed with 2.5 tbsp water)
- Salt and pepper to taste
- 1 tbsp olive oil (for cooking)
- 4 whole grain burger buns
- Lettuce, tomato slices, and avocado slices for serving
Instructions:
- In a large bowl, mash the black beans with a fork or potato masher until mostly smooth with some chunks remaining.
- Add the breadcrumbs, grated carrots, red onion, bell pepper, parsley, garlic, cumin, paprika, chili powder, egg (or flax egg), salt, and pepper. Mix until well combined.
- Form the mixture into 4 patties.
- Heat the olive oil in a large skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until browned and heated through.
- Toast the whole grain burger buns in the same skillet or oven if desired.
- Serve the veggie burgers on buns with lettuce, tomato slices, and avocado slices.
Sweet Potato Fries Recipe
Ingredients:
- 2 large sweet potatoes
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp ground cumin
- Salt and pepper to taste
Instructions:
- Preheat the oven to 425°F (220°C).
- Peel the sweet potatoes and cut them into 1/4-inch thick fries.
- In a large bowl, toss the sweet potato fries with olive oil, garlic powder, paprika, cumin, salt, and pepper.
- Spread the fries in a single layer on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes, turning halfway through, until crispy and golden brown.
- Remove from the oven and let cool slightly before serving.
